We call it the Carlisle shuffle you have lunch here (Back Door Caf\u00e9) one day than maybe Tuesday you go to Amy\u2019s (Amy&#8217;s Thai Cuisine ) then California caf\u00e9 but then Friday your back at the Back Door Caf\u00e9 you just kind of shuffle around and I\u2019m proud to be part of that shuffle. If you don\u2019t come to me every day that\u2019s fine but if you come here one or twice a week I\u2019m thrilled.\u201d (Bill Seras)<\/em><\/font><\/p>\n[audio:bill-seras-quote.mp3]\n<p>(Audio Clip of Bill Seras)<\/p>\n<p><font color=\"#000000\">Mathew Pisano, owner of Matty\u2019s Kitchen, told me \u201cyou got to try Bill\u2019s Pizza. It\u2019s the best kept secret in town.\u201d However, when I went to eat there,  just about every table had at least one pizza on it, leading me to believe that his great pizza wasn\u2019t actually that much of a secret. Originally named <em>Back Door Pizza, Back Door Caf\u00e9 <\/em>has been a staple in Carlisle for over twenty-five years. After talking to Bill, he told me while the name has changed, the ownership and the pizza has remained the same. However, Bill does not feel that it is just the pizza that has made him last so long, but, much like the Hamilton, it is a combination of the atmosphere and food that keeps business consistent. Bill explained that except for the initial three weeks after Panera opened at the Carlisle Plaza near Wal-Mart, his business like the Hamilton\u2019s has been pretty constant.<\/font><\/p>\n<p style=\"text-align: center\"><a href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/bill-seras.JPG\" title=\"bill-seras.JPG\"><img decoding=\"async\" src=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/bill-seras.JPG\" alt=\"bill-seras.JPG\" align=\"right\" \/><\/a><\/p>\n<p><font color=\"#000000\"><em>\u201cI\u2019m blessed, I mean I\u2019m fortunate that I can have a business that supports my family, and at the same time I don\u2019t have to be here 24 hours, 7 days a week.
