Meehan offers some insight into this phenomenon in her book, <u>The New Way: Greeks Come to Carlisle, Pennsylvania<\/u>:<\/font><\/p>\n<p><font face=\"Times New Roman\">\u00a0<\/font><\/p>\n<p style=\"margin: 0in 0.5in 0pt\" class=\"MsoNormal\"><font face=\"Times New Roman\">Working as an autonomous businessperson was the main consideration, and owning a business was a major step representing true economic freedom\u2026the restaurant became the ideal undertaking for an independent person who could set the menu and the hours of operation, and with an increased number of employees, the businessperson was in position to help others by providing a job and training.<span>\u00a0 <\/span>The independently run restaurant provided excellent opportunities for the private businessman.<\/font><a name=\"_ftnref1\" href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/wp-admin\/#_ftn1\" title=\"_ftnref1\"><span class=\"MsoFootnoteReference\"><span><span class=\"MsoFootnoteReference\"><span style=\"font-size: 12pt;font-family: 'Times New Roman'\">[1]<\/span><\/span><\/span><\/span><\/a><\/p>\n<p><font face=\"Times New Roman\">\u00a0<\/font><\/p>\n<p style=\"margin: 0in 0in 0pt;line-height: 200%\" class=\"MsoNormal\"><font face=\"Times New Roman\">Several of the town\u2019s restaurants are representative of this European immigrant strive to ascend the social class ladder in America.<span>\u00a0 <\/span>In order to explore the comparison of traditional and contemporary visions of the downtown, the following will analyze the downtown\u2019s two Italian eateries, with George\u2019s Sub\u2019s and Pizza as a reflection of traditional Carlisle while Piatto will represent the contemporary.\u00a0<\/font><\/p>\n<p style=\"margin: 0in 0in 0pt;line-height: 200%\" class=\"MsoNormal\">&nbsp;<\/p>\n<p align=\"left\" style=\"margin: 0in 0in 0pt;line-height: 200%\" class=\"MsoNormal\"><font face=\"Times New Roman\">One of Carlisle\u2019s best representations of this narrative lies in the story <\/font><font face=\"Times New Roman\">of George\u2019s Sub\u2019s and Pizza.<span>\u00a0\u00a0\u00a0<a href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/george-alone-200-x-300.jpg\" title=\"george-alone-200-x-300.jpg\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" align=\"middle\" width=\"1\" src=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/george-alone-200-x-300.jpg\" alt=\"george-alone-200-x-300.jpg\" height=\"1\" \/><\/a><\/span><\/font><font face=\"Times New Roman\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" align=\"middle\" width=\"1\" src=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/george-alone-200-x-300.jpg\" alt=\"george-alone-200-x-300.jpg\" height=\"1\" \/>\u00a0<a href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/george-alone-200-x-300.jpg\" title=\"george-alone-200-x-300.jpg\"><img decoding=\"async\" align=\"right\" src=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/george-alone-200-x-300.jpg\" alt=\"george-alone-200-x-300.jpg\" \/><\/a><\/font><\/p>\n<p style=\"margin: 0in 0in 0pt;line-height: 200%\" class=\"MsoNormal\"><font face=\"Times New Roman\">George\u2019s parents immigrated to America in the early twentieth century.<span>\u00a0 <\/span>He eventually came to Carlisle, at the suggestion of a former Navy buddy, and took over the Kruger\u2019s Dairy store building, located on High Street, in 1958.<span>\u00a0 <\/span>George epitomized the hard working, working-class American, a trait that is very well respected in a town like Carlisle.<span>\u00a0 <\/span>In an interview with Pete Merisotis, George\u2019s son, Pete explains his father\u2019s work ethic:<\/font><\/p>\n<p><font face=\"Times New Roman\">\u00a0<\/font><\/p>\n<p style=\"margin: 0in 0.5in 0pt\" class=\"MsoNormal\"><font face=\"Times New Roman\"><span>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/span>He had a closet in the back here (George\u2019s), showered in the basement, had a cot, a shelf, a light, and a bible, he worked like 16-20 hour days, at least, and he would close at around midnight and open up at 6a.m.<span>\u00a0 <\/span>So, it was a job.<span>\u00a0 <\/span>The first three years, that\u2019s how he lived, because he didn\u2019t feel that he could afford to live in the apartments he had upstairs here, and after three years he took one of the apartments.<\/font><a name=\"_ftnref2\" href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/wp-admin\/#_ftn2\" title=\"_ftnref2\"><span class=\"MsoFootnoteReference\"><span><span class=\"MsoFootnoteReference\"><span style=\"font-size: 12pt;font-family: 'Times New Roman'\">[2]<\/span><\/span><\/span><\/span><\/a><font face=\"Times New Roman\"> <\/font><\/p>\n<p><font face=\"Times New Roman\">\u00a0<\/font><\/p>\n<p style=\"margin: 0in 0in 0pt;line-height: 200%\" class=\"MsoNormal\"><font face=\"Times New Roman\">Despite changes to Carlisle\u2019s landscape and direction of the town, George\u2019s has served as a staple among the community for almost fifty years now.<span>\u00a0 <\/span>One of the aspects of George\u2019s that has led to its long-lived success has been its continued acceptance of the Carlisle community.<span>\u00a0 <\/span>Inside the restaurant, the walls are covered with photographs and memorabilia from residents and visitors dating back to its founding in \u201958.<span>\u00a0 <a href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/georges-interior-pic-2.jpg\" title=\"georges-interior-pic-2.jpg\"><img decoding=\"async\" align=\"left\" src=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/georges-interior-pic-2.jpg\" alt=\"georges-interior-pic-2.jpg\" \/><\/a><\/span><\/font><font face=\"Times New Roman\">George\u2019s immediately assumed a working class identity of which it still proudly assumes today.<span>\u00a0 <\/span>Meehan notes the cultural significance of George Merisotis\u2019 ambition, \u201cGeorge Merisotis\u2019s move to Carlisle is an instance of true modern mobility, in which individuals seeking opportunities for a better life strike out on their own.\u201d<\/font><a name=\"_ftnref3\" href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/wp-admin\/#_ftn3\" title=\"_ftnref3\"><span class=\"MsoFootnoteReference\"><span><span class=\"MsoFootnoteReference\"><span style=\"font-size: 12pt;font-family: 'Times New Roman'\">[3]<\/span><\/span><\/span><\/span><\/a><font face=\"Times New Roman\"><span>\u00a0 <\/span>Pete Merisotis has been very conscious of maintaining his father\u2019s hard working nature, which, like several of Carlisle\u2019s other long lasting restaurants deeply rooted in family tradition, has generated success and appreciation from its patrons.<\/font><\/p>\n<p style=\"margin: 0in 0in 0pt;line-height: 200%\" class=\"MsoNormal\"><font face=\"Times New Roman\"><span>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/span>While George\u2019s, and several other restaurants with similar working class traditions have served as icons within the Carlisle economy, contemporary visions for the town\u2019s future success have changed.<span>\u00a0 <\/span>Piatto represents this new vision.<span>\u00a0 <\/span>Piatto was introduced to Carlisle nearly ten years ago under the direction of founder and current owner Ross Morris.<span>\u00a0 <a href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/ross-morris-sentinel-pic-sitting-down.jpg\" title=\"ross-morris-sentinel-pic-sitting-down.jpg\"><img decoding=\"async\" align=\"right\" src=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/files\/ross-morris-sentinel-pic-sitting-down.jpg\" alt=\"ross-morris-sentinel-pic-sitting-down.jpg\" \/><\/a><\/span><\/font><\/p>\n<p style=\"margin: 0in 0in 0pt;line-height: 200%\" class=\"MsoNormal\"><font face=\"Times New Roman\"><span><\/span>Prior to opening Piatto, Morris ran the first coffee shop in downtown Carlisle in the building that is now occupied by Matty\u2019s Kitchen.<span>\u00a0 <\/span>During our interview, I inquired as to how Morris decided to open an Italian restaurant, something with which he had basically no prior experience.<span>\u00a0 <\/span>\u201cI basically wanted to do a restaurant, I looked around at the ideas that I could do and what was not being represented and though Italian was the way to go.\u201d<\/font><a name=\"_ftnref4\" href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/wp-admin\/#_ftn4\" title=\"_ftnref4\"><span class=\"MsoFootnoteReference\"><span><span class=\"MsoFootnoteReference\"><span style=\"font-size: 12pt;font-family: 'Times New Roman'\">[4]<\/span><\/span><\/span><\/span><\/a><font face=\"Times New Roman\"><span>\u00a0 <\/span>Mr. Morris takes exceptional pride in creating an authentic Italian dining experience.<\/font><\/p>\n<p style=\"margin: 0in 0in 0pt;line-height: 200%\" class=\"MsoNormal\"><font face=\"Times New Roman\"><span>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/span>Morris makes particular note of the authenticity of the food his restaurant prepares and how it differs from what most Americans have come to accept as Italian.<span>\u00a0 <\/span>\u201cBut Italians, actually the only Italian-American (restaurants) you could find in America until fairly recently was straight up Italian-American.<span>\u00a0 <\/span>You know, spaghetti and meatballs, lasagna, they don\u2019t serve that in Italy, you won\u2019t find it.\u201d<\/font><a name=\"_ftnref5\" href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/wp-admin\/#_ftn5\" title=\"_ftnref5\"><span class=\"MsoFootnoteReference\"><span><span class=\"MsoFootnoteReference\"><span style=\"font-size: 12pt;font-family: 'Times New Roman'\">[5]<\/span><\/span><\/span><\/span><\/a><font face=\"Times New Roman\"><span>\u00a0 <\/span>Morris goes on to explain that he enjoys Italian-American food, but emphasizes the fact that it is different from real Italian food.<span>\u00a0 <\/span>Traveling through Italy several times, Morris feels as though he has been able to recreate authentic Italian cuisine, much like what you will find in Italy.<span>\u00a0 <\/span>Considering that Piatto is more of an upscale restaurant, especially compared to most within Carlisle\u2019s immediate surroundings, Morris notes that his food caters to and is better appreciated by a certain demographic, a class that has easier access to the luxury of experiencing different cultures, unlike George\u2019s which has focused on mainstream Italian-American food.<\/font><\/p>\n<p style=\"margin: 0in 0in 0pt\" class=\"MsoNormal\"><span><font face=\"Times New Roman\">\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/font><\/span><\/p>\n<p style=\"margin: 0in 0.5in 0pt\" class=\"MsoNormal\"><font face=\"Times New Roman\"><span>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/span><span>\u00a0 <\/span>The people that seem to appreciate us most are people that have traveled the world, people that know the difference between mediocre and good food.<span>\u00a0 <\/span>And Italians are incredibly impressed with this.<span>\u00a0 <\/span>I never understood this, like Italians come to Carlisle and they bring them here and it\u2019s like man if I was in Italy I\u2019d be wanting to eat Italian food, not American food.<span>\u00a0 <\/span>And they say, you don\u2019t understand.<span>\u00a0 <\/span>They know they have the best food.<span>\u00a0 <\/span>It\u2019s not an egotistical thing either; they just know that their food is that good.<\/font><a name=\"_ftnref6\" href=\"https:\/\/blogs.dickinson.edu\/carlislehistory\/wp-admin\/#_ftn6\" title=\"_ftnref6\"><span class=\"MsoFootnoteReference\"><span><span class=\"MsoFootnoteReference\"><span style=\"font-size: 12pt;font-family: 'Times New Roman'\">[6]<\/span><\/span><\/span><\/span><\/a><\/p>\n<p><font face=\"Times New Roman\">\u00a0<\/font><\/p>\n<p style=\"margin: 0in 0in 0pt;line-height: 200%\" class=\"MsoNormal\"><font face=\"Times New Roman\">Morris\u2019 attempt to cater to a different demographic than most of Carlisle\u2019s traditional family-oriented-working-class restaurants is representative of the town\u2019s desire to appeal to a wider audience.<span>\u00a0 <\/span>This is not to say that newer businesses don\u2019t share a
