French Crêpes

Whatever the time of day, in the morning for breakfast, at noon for dessert or in the evening before sleeping, French pancakes are alwajiys a good idea. Today we are embarking on the French / Breton culture and we will discover the flavors of a dessert with a lot of history. Here is a link to learn more about the science behind French Crêpes

Ingredients
    Wet Ingredients
  • 2 cup milk
  • 1/2 cup water
  • 2 tbsp butter ((melted))
  • 3 eggs
  • Dry Ingredients
  • 1 cup flour ((all-purpose))
  • 1/4 tsp salt
  • 1 tsp white sugar
Instructions
  1. Process all the ingredients in a blender until the mixture is smooth.
  2. Allow the batter to rest in the refrigerator for at least 20 minutes before making into crepes.
  3. Melt a little butter in a crepe pan or large skillet over low-medium heat.
  4. Add 3 tablespoons of batter to the pan and swirl until the bottom of the pan is covered with batter.
  5. Cook the crepe for 1 minute, or until the crepe is slightly moist on top and golden underneath.
  6. Loosen the edges of the crepe, slide the spatula under it, and then gently flip it upside down into the pan.
  7. Cook for 1 minute and transfer the cooked crepe to a plate to keep warm.
  8. Add topping of your choice.
