Macarons

Ingredients
    Shells
  • 1 3/4 cup powdered sugar
  • 1 cup almond flour
  • 1 tsp salt (divided)
  • 3 egg whites
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 2 drop gel food coloring
  • Filling
  • 1 cup unsalted butter
  • 3 cup powdered sugar
  • 1 tsp vanilla extract
  • 3 tbsp heavy cream
Instructions
    Shells
  1. Combine powdered sugar, 1/2 tsp of salt, and almond flour in a food processor.
  2. Beat 1/2 tsp salt and 3 egg whites with an electric hand mixer until soft peaks form.
  3. Beat together with granulated sugar until stiff peaks form.
  4. Combine with vanilla extract and gel food coloring and beat until incorporated.
  5. Add 1/3 sifted flour mix at a time to egg mix and gently fold with a spatula until combined.
  6. After all flour is added in, slowly fold mixture until the batter falls into ribbons.
  7. Transfer into a piping bag and place dots of batter in 3 cm circles.
  8. Remove air bubbles by tapping tray then let sit until dry.
  9. Bake for 17 mins at 400°F then let cool.
  10. Filling
  11. Beat unsalted butter in a mixer for 1 min.
  12. Sift in powdered sugar and beat until fully incorporated.
  13. Add vanilla extract.
  14. Add heavy cream into mixture 1 tbsp at a time and beat until desired consistency is reached.
  15. Combining the two
  16. Create a sandwich with buttercream filling and shells. Allow to sit for 24 hours in an airtight container.
