Oatmeal Raisin Cookies

Ingredients
  • 6 oz Butter (Unsalted butter)
  • tbsp Vanilla Extract
  • Egg (Large Egg (50g))
  • 7 oz Light Brown Sugar
  • 7 oz White Sugar
  • 2 tsp Diamond Crystal Kosher Salt
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Baking Soda
  • 7 oz Old Fashioned Rolled Oats
  • 6 oz All Purpose Flour
  • 7 oz Dried Cranberries
Instructions
  1. 1. Line 2 rimmed baking sheets with parchment paper.
  2. 2. Preheat oven to 350 degrees Fahrenheit.
  3. 3. In a medium bowl stir 6 ounces cup of butter, 1 TBS of vanilla extract, 1 large egg, 3⁄4 cup of brown sugar, 1 cup of white sugar, 2 tsp of kosher salt, 1 tsp of cinnamon, and 1⁄2 tsp of baking soda until no lumps remain.
  4. 4. Gently mix 2 cups of rolled oats, 1 1⁄4 cup of all- purpose flower, and 1 1⁄4 cup of cranberries into same medium sized bowl as above.
  5. 5. Divide into 30 one-ounce portions and arrange on baking sheet.
  6. 6. Let stand at room temperature for at least 25 minutes.
  7. 7. Bake for 15 minutes or until pale gold around edges.
  8. 8. Cool on baking sheets for about 10 minutes or until firm
