Plant Based Culinary Arts Apprenticeship offered at Heartwood Institute

Start Date: April 1, 2016
Duration: 3 month apprentices, or 7 months. A full 7 month apprenticeship is recommended to be able to truly work with the seasons and develop a strong foundation. There will also be 3 month apprenticeships available as well.

Apprentices will live and work at Heartwood Institute, an emerging permaculture center with a focus on research, education and collaboration. Students will work daily in a vegetarian kitchen preparing meals for the Heartwood community. Apprentices will focus on one discipline and create full systems, products, and a deeper understand of a particular field in the culinary world. An opportunity to work during retreats for a monetary stipend will be available during the apprenticeship as well. There will also be an opportunity to attend farming and food production conferences throughout the season. This will provide a full season approach to plant based food preservation and the ability to focus on a desired discipline. There will be regular educational reading that focuses on the food system in a variety of different ways, and will connect to the seasons and the food we will be preparing.  Students will work in the kitchen garden, the kitchen, the indoor classroom, and in nature’s outdoor classroom.
Students are required to spend 40 hours a week (30 hours if student choose to camp) working on educational activities, kitchen duties, or on the development of their particular focus. In exchange they will receive plant based meals, housing in the woods of Humboldt county, educational classes and the opportunity to research and develop a focus in the culinary world.
