{"id":1542,"date":"2012-01-26T17:36:01","date_gmt":"2012-01-26T15:36:01","guid":{"rendered":"http:\/\/blogs.dickinson.edu\/toulouse\/?p=1542"},"modified":"2012-01-26T17:36:01","modified_gmt":"2012-01-26T15:36:01","slug":"apple-prune-crisp","status":"publish","type":"post","link":"https:\/\/blogs.dickinson.edu\/toulouse\/2012\/01\/26\/apple-prune-crisp\/","title":{"rendered":"Apple Prune Crisp"},"content":{"rendered":"<p>Last week-end in the Pyr\u00e9n\u00e9es mountains, Marie taught us how to prepare a delicious Apple Prune Crisp!<\/p>\n<p>by Ellen Aldin<\/p>\n<p>&nbsp;<br \/>\nServes 8 People<br \/>\nPreparation Time: 25 minutes<br \/>\nCook Time: 45 minutes<\/p>\n<p>Ingredients:<br \/>\n2 puff pastry sheets<br \/>\n\u00bd (.55) pound of apples<br \/>\n1 (1.087) cup of applesauce<br \/>\nSeveral prunes to taste<br \/>\n1.5 tablespoons (1.405) of vanilla sugar<br \/>\n1.5 tablespoons (1.405) of melted butter<br \/>\n1 small glass of Armagnac<\/p>\n<p>Preparation:<br \/>\n1.\u00a0\u00a0 \u00a0Place one of the puff pastry sheets in a pie pan with parchment paper.<br \/>\n2.\u00a0\u00a0 \u00a0Spread the applesauce on the sheet of puff pastry in the pan. Leave a border for future closing of the puff pastry sheets.<br \/>\n3.\u00a0\u00a0 \u00a0Wash the apples, remove the cores, and cut them into slices. Keep the skin on.<br \/>\n4.\u00a0\u00a0 \u00a0Place the apple slices evenly on the applesauce-covered puff pastry. Add several prunes to taste.<br \/>\n5.\u00a0\u00a0 \u00a0Melt the butter and add the vanilla sugar and Armagnac.<br \/>\n6.\u00a0\u00a0 \u00a0Spread the entire butter mixture with a watered brush.<br \/>\n7.\u00a0\u00a0 \u00a0Cover all of this with the second puff pastry sheet after moistening the edges with water with the brush to form a seal.<br \/>\n8.\u00a0\u00a0 \u00a0Use a fork to pinch shut the all of the edges of the pastry sheet to prevent any leaks.<br \/>\n9.\u00a0\u00a0 \u00a0Make a hole in the middle of the top pastry sheet to let the gas escape. Cut an \u201cX\u201d in the center of the sheet and pull back the edges.<br \/>\n10.\u00a0\u00a0 \u00a0 Break up the egg yolk and spread it on the top pastry sheet. Add sugar on top of the entire pastry.<br \/>\n11.\u00a0\u00a0 \u00a0Cook the pastry in the oven for 45 minutes at 320 degrees. Make sure the lower sheet is cooked through. Be careful; the entire pastry will rise significantly in the oven!<br \/>\n12.\u00a0\u00a0 \u00a0 After a cooling period the pastry is ready to eat.
