- 1. Line 2 rimmed baking sheets with parchment paper.
- 2. Preheat oven to 350 degrees Fahrenheit.
- 3. In a medium bowl stir 6 ounces cup of butter, 1 TBS of vanilla extract, 1 large egg, 3⁄4 cup of brown sugar, 1 cup of white sugar, 2 tsp of kosher salt, 1 tsp of cinnamon, and 1⁄2 tsp of baking soda until no lumps remain.
- 4. Gently mix 2 cups of rolled oats, 1 1⁄4 cup of all- purpose flower, and 1 1⁄4 cup of cranberries into same medium sized bowl as above.
- 5. Divide into 30 one-ounce portions and arrange on baking sheet.
- 6. Let stand at room temperature for at least 25 minutes.
- 7. Bake for 15 minutes or until pale gold around edges.
- 8. Cool on baking sheets for about 10 minutes or until firm
