Steam-Powered Popovers

Popovers are a type of quick roll composed of milk, eggs, flour, melted butter, and salt. The specific recipe I am researching comes from Cooking for Geeks, page 239.

  • Whisk the above ingredients in a mixing bowl or blend in a blender.
  • Preheat both the oven and the popover cup/muffin tin at 425°F / 220°C
  • Grease popover cup or muffin tin with butter
  • Fill each cup about 1/3 to ½ full with batter and bake. (Minor Note: Depicted in the image is the adapted recipe of using olive oil instead of butter. The contrast between batter and butter is not as clear as olive oil due to the similar colors.)
  • After about 15 minutes, drop temperature to 350°F / 180°C and continue baking for about 20 more minutes. (Do not open the oven to check, as that will interrupt the rising process!)
  • Take out the popovers, and done! Make sure to eat them soon!

Notes

IMPORTANT NOTE: The serving amount is 12 because I was using a muffin tin, which typically is much shallower than a popover cup.
