Graham Cracker Crust
- Add graham cracker crumbs, melted butter, and salt to the pan
- Stir until they are mixed well Cheesecake
- Preheat oven to 450°F/230°C
- Combine cream cheese, goat cheese, lemon juice, vanilla extract, salt, and orange flower water in a bowl with a stand mixer
- Mix on low power until the ingredients are combined
- Put speed on medium-low and add all the sugar
- Remove the bowl from the stand mixer and put a sieve above the bowl
- Crack the eggs in the sieve and whisk until they pass through
- In a 1-quart stainless steel pot, bring the cream to a full boil
- While mixing slowly, add the hot cream all at once
- Pour batter into the prepared pan and place on a baking sheet
- Put the cheesecake in the oven, and set the oven to 250°F/120°C
- The cheesecake will be done when the very center registers 145°F/63°C on a digital thermometer inserted to a depth of 2-inches
- Cool it for 15 minutes
- Refrigerate it for 12 hours
