  • Add graham cracker crumbs, melted butter, and salt to the pan
  • Stir until they are mixed well
  • Cheesecake
  • Preheat oven to 450°F/230°C
  • Combine cream cheese, goat cheese, lemon juice, vanilla extract, salt, and orange flower water in a bowl with a stand mixer
  • Mix on low power until the ingredients are combined
  • Put speed on medium-low and add all the sugar
  • Remove the bowl from the stand mixer and put a sieve above the bowl
  • Crack the eggs in the sieve and whisk until they pass through
  • In a 1-quart stainless steel pot, bring the cream to a full boil
  • While mixing slowly, add the hot cream all at once
  • Pour batter into the prepared pan and place on a baking sheet
  • Put the cheesecake in the oven, and set the oven to 250°F/120°C
  • The cheesecake will be done when the very center registers 145°F/63°C on a digital thermometer inserted to a depth of 2-inches
  • Cool it for 15 minutes
  • Refrigerate it for 12 hours
