Macarons are a pastry native to France made of almond flour. They are notoriously difficult to make, so it is important to follow this recipe closely.

- Combine powdered sugar, 1/2 tsp of salt, and almond flour in a food processor.
- Beat 1/2 tsp salt and 3 egg whites with an electric hand mixer until soft peaks form.
- Beat together with granulated sugar until stiff peaks form.
- Combine with vanilla extract and gel food coloring and beat until incorporated.
- Add 1/3 sifted flour mix at a time to egg mix and gently fold with a spatula until combined.
- After all flour is added in, slowly fold mixture until the batter falls into ribbons.
- Transfer into a piping bag and place dots of batter in 3 cm circles.
- Remove air bubbles by tapping tray then let sit until dry.
- Bake for 17 mins at 400°F then let cool. Filling
- Beat unsalted butter in a mixer for 1 min.
- Sift in powdered sugar and beat until fully incorporated.
- Add vanilla extract.
- Add heavy cream into mixture 1 tbsp at a time and beat until desired consistency is reached. Combining the two
- Create a sandwich with buttercream filling and shells. Allow to sit for 24 hours in an airtight container.
