Bulgarian Kebabs

Bulgarian kebabs are a mix of beef and lamb, and they are traditionally offered in sweet or  spicy versions depending on the cook’s preference. This is the sweet version. Here at Dickinson College Farm you can purchase your own ground beef and ground lamb. Raised on our farm, certified grass-fed, humanly raised, animal welfare approved! we hope you enjoy this wonderful recipe! 

1 1/2 lb ground beef

1lb ground lamb

1 1/2 onions, grated

2 teaspoons ground cumin

1 1/2 teaspoons kosher salt

1 teaspoon smoked paprika

1 teaspoon ground pepper

1 teaspoon crushed aleppo pepper

1/2 cup chopped fresh mint

1/2 cup chopped fresh parsley

2 tablespoons seltzer

1 teaspoon sugar

  1. Combine all the ingredients in a large bowl. Mix with your hands until well blended. Form into balls about 2 inches in diameter and thread onto skewers. Refrigerate for 1 hour before cooking.
  2. Grill the kebabs over smolder coals, or pan-fry or broil, until the outsides are lightly charred and the centerers are cooked through, 3 to 5 minutes per side.
