Bulgarian kebabs are a mix of beef and lamb, and they are traditionally offered in sweet or spicy versions depending on the cook’s preference. This is the sweet version. 1 1/2 lb ground beef
1lb ground lamb
1 1/2 onions, grated
2 teaspoons ground cumin
1 1/2 teaspoons kosher salt
1 teaspoon smoked paprika
1 teaspoon ground pepper
1 teaspoon crushed aleppo pepper
1/2 cup chopped fresh mint
1/2 cup chopped fresh parsley
2 tablespoons seltzer
1 teaspoon sugar
- Combine all the ingredients in a large bowl. Mix with your hands until well blended. Form into balls about 2 inches in diameter and thread onto skewers. Refrigerate for 1 hour before cooking.
- Grill the kebabs over smolder coals, or pan-fry or broil, until the outsides are lightly charred and the centerers are cooked through, 3 to 5 minutes per side.
